Summer is coming to a close, and before watermelon season ends I want to share this easy watermelon salad I make for my family. We ate lunch at Dish Society one Sunday after church and I ate their seasonal watermelon salad. Oh my! Let me just say it was fresh, juicy, crunchy and sweet all in one bite. I knew I needed to get home and come up with my own version of this salad.
I was super excited when only 5 simple ingredients turned into this vibrant tasty summer salad! Its a perfect side to a dinner, or when you need a quick snack.
Watermelon Mint Salad
1/4-1/2 of a watermelon cut into small pieces
1-2 cucumber peeled and cut into small pieces
Fresh Mint -small handful chopped
Fresh lemon juice
Sea Salt & Coarse black pepper
Mix the watermelon and cucumber together in a bowl. Once mixed, squeeze 1/2 of a lemon over the salad, depending on the lemon, and taste you can add the other 1/2 if needed. I ended up squeezing one full lemon on mine because I like it more tart. Then add the chopped mint and stir. You can start small with the mint, as the flavor is strong and add to your liking. Add 1/4 tsp of salt and pepper. Mix well and dig in!
I hope you enjoy this little creation at home. My boys are not fans of a lot of pepper, so I scoop out a few handfuls of salad for them before I add pepper to the bowl. That way the whole family can enjoy, including little W. Now, the boys have an easy side for dinner or a healthy snack after a hot day at the pool or backyard flag football!
