Protein Pancakes

Happy Friday y’all!

I am always looking for quick and easy recipes in the morning. I am a breakfast person and don’t like to go without it. My mornings are quite busy with three little runners to feed. One is in elementary school, one pre-school and the youngest gets to be my side kick all day. So to say the least, we are usually “running” in the morning.

I discovered these yummy protein pancakes, that are so delicious and easy to make. They are a win win also because my 1 year old eats them too!

They take minutes to whip up and they will keep you full through your morning work out, daily errands or that 10am meeting.

This is all you need + 2 eggs and a dash of water to mix up these protein pancakes.

After mixing all your ingredients, your mix will look similar to this and be ready to pour in the pan.

Protein Pancakes

Serving 1- makes 4 small pancakes

2 eggs

1/4 c GF oats

1 small banana (overly ripened is better)

1 tsp Cinnamon (or more)

1 tbsp chia seeds

1 scoop of protein powder (I use Vega)

*Toppings

Raw almond butter – (I love Trader Joe’s Raw Almond Butter)

Directions

Mash banana in a bowl and mix in all other ingredients. Mix until combine.

*if mix seems thick, add 1-2 TBSP of water

Heat 1 tbsp. Coconut oil in a skillet on medium to medium-high heat. Let cook a few minutes on each side.

Serve with favorite topping.
