We are all so busy and sometimes lunch can turn into eating your toddler’s leftovers or snacking your way until you get to dinner! I love this avocado toast for so many reasons.
First off, it is easy to make and you don’t need many ingredients. I try to keep all of the ingredients on hand because they are easy to store and popular items in our home.
Second, you can use this avocado salad mixture in so many different ways. I like to have it on toasted Eziekel bread. You can also eat it on lettuce wraps or on top of a bed of greens or right out of this bowl!
Avocado Toast with a Twist
2 boiled eggs
2 boiled egg whites
1 large avocado
1/2 tsp dijon mustard (check ingredients, no added processed junk)
1 tbsp fresh lemon juice
Salt and Pepper to taste
1-2 slices of bread
Optional* Sprinkle with Trader Joe’s Everything But the Bagel Seasoning
Mash and mix the boiled eggs, avocado, mustard, lemon juice in a bowl. Add salt and pepper to taste. Spread avocado egg salad onto toast.
