Since the weather is trying to warm up here, and today is the first day of March, I thought I would share one of my favorite lunch recipes that I make a ton of in the warmer months.
I am all about easy lunch ideas especially since I am usually at home getting my youngest ready for nap time. If I am not eating leftovers I am trying to create something I can eat on the go and doesn’t take long to make.
Avocado Egg Salad

Avocado Egg Salad Lettuce Wraps
- 2 boiled eggs
- 2 boiled egg whites
- 1 ripe large avocado
- 1/2 tsp dijon mustard (check ingredients, no added chemicals/sugar)
- 1 tbsp fresh lemon juice
- Salt and Pepper to taste
Lettuce Wraps
- 2-3 lettuce leaves per person (any type of lettuce will work)
- Cucumber-sliced
- Dijon Mustard
- Everything But the Bagel Seasoning
Directions:
Slice your cucumber into spears (I like to peel my cucumber also, but it’s not necessary). Lay 2-3 spears on each piece of lettuce, add your egg salad, a dab of mustard and bagel seasoning and you are set. I love that this seasoning is available online if you don’t have a Trader Joe’s in your area!! Click here to grab yours! I like to serve this with a piece of fruit on the side.
I love making this avocado egg salad, and like that it can be made into different lunch ideas depending on your taste, lifestyle and time. I usually make this on a Monday for lunch and get to enjoy it for a few days. What are some of your go to lunch ideas? Share below.
**Note put in an air tight container and use extra lemon juice to keep avocados from browning to quickly
