Casual Monday | Cleaning Eating | 4 Favorites

Happy Monday y’all!  Today, I will start menu planning and decide what I want to cook this week.  I will plan my grocery store trip for today after I drop my bigger boys at school.  My dinner choices will be based on football practices, my husband’s schedule and how much time in the day I have to prep.

Mondays are all about comfort for me since I am running boys to and from school, fitting in a workout…..maybe 😉 and errands.  These four favorites are coming straight to you from my last shopping trip.

Favorite #1

I am loving this cardigan right now.  I saw it hanging in the store and knew it would be perfect for fall or the not so fall weather in Texas.  It is super soft and will be an easy layering piece to wear over any long sleeve top.  I like the open look of it with this outfit, but you can also belt it around your waist.  Plus who doesn’t love a good cardigan with big pockets!

Favorite #2

I paired the cardigan with this dolman striped top that I scored for $20!  It comes in two different colors and is light weight and super soft.  The sleeves make it the perfect over sized looking top but without the bulk.

These skinny jeans are my newest pair and did I mention I snagged them at 40% off.  I love the undone hem and slit up the side to make them unique.  They are high-waisted and have just the right amount of stretch.

Favorite #4

My last favorite about this outfit are these slip on mule style shoes.  I  am slowly dipping my toes into this style and let me tell you, I am so glad I did!  These black slip ons were under $24, so I felt like it was a no brainer to give them a shot.  I’m so glad I bought them!  I recently wore them to a casual dinner with family and they were extremely comfortable.  I sort of felt like I was wearing slippers all evening!

When it comes to casual Mondays, I usually feel like sticking to what I know in the kitchen.  I have four recipes that my family loves to eat, and I always have most of the ingredients on hand.

Favorite #1

First up is this creamy tomato chicken dish.  When I started eating clean years ago this was one of the first things I made.  A friend sent me this recipe and man I am so glad she did!  Thanks Dani! 🙂 We typically enjoy this dish on a bed of fresh spinach to get our greens in and to keep it grain free.

When I am limited on time during the week this next recipe comes in handy.  It takes 20 minutes, and I can throw it together with a salad and a veggie.  We love doing roasted broccoli on nights that dinner prep is quick.  All you need is a head of broccoli, olive oil and salt & pepper.  Place the broccoli on a lined baking sheet, toss with olive oil, salt & pepper and roast in the oven at 375 for about 20 minutes.  Done.

A new recipe that I have made a ton of lately is this fun twist to “Taco Tuesday.” Taco lasagna casserole is so easy to make and I get to use my favorite Siete brand tortillas that can be found at Whole Foods!  I did find the salsa in this recipe a little spicy, but still it was so good.  If you are planning to cook for your littles, just a heads up about the spice.

Lastly, this orange chicken dish is one of my easy faves!  This is a newer dish that we added into our rotation.  I love it because it is quick and easy.  My boys love the flavor of this one too!  I usually serve it on cauliflower rice, and I have even added broccoli to the skillet to include another vegetable.  My boys like this dish with regular white or brown rice.
