
Hello summer time! I can’t believe June is here and the heat is already rolling in. Can you believe this recipe was one of my very first blog posts almost THREE years ago! I forgot about this little gem until one of my friends requested it at a recent gathering. I forgot how easy this salad is to make and did I mention GOOD!
I recreated this recipe after having something really similar at our local Dish Society restaurant. It has been a favorite ever since. 🙂 This salad makes for an easy refreshing snack or the perfect side to a summer BBQ or dinner.



Watermelon Cucumber Salad
1/2 of a watermelon cut into small pieces
2 cucumber peeled and cut into small pieces
Fresh Mint -small handful chopped OR try it with basil if you are not a fan of mint
Juice of one lemon
Sea salt & coarse black pepper
Mix the watermelon and cucumber together in a bowl. Once mixed, squeeze 1/2 of a lemon over the salad, depending on the lemon, and taste you can add the other 1/2 if needed. I ended up squeezing one full lemon on mine because I like it more tart. Then add the chopped mint and stir. You can start small with the mint, as the flavor is strong and add to your liking. Add 1/4 tsp of salt and pepper. Mix well and dig in!
I like to use melamine bowls for easy storage and travel.
