Organizing the pantry + one easy healthy dinner

Hello friends and welcome back! I hope everyone had a restful new year and got to relax just a bit. We are over the C*vid and the flu and all back to school and doing well. It did hit me that this is W’s last semester of preschool! He goes to the BIG school next school year. Crazy to think…I’ve been driving to preschool for about 10 years now. What will I do with those extra two hours gained! 😉

In January, I like to take the time to reset and reflect on what and how I want to start the year. I immediately get my eating in check! I usually indulge during the holidays, and with being sick this holiday season all rules were out the window. So, January brings old and new recipes in and also cutting out the things I know I don’t need. I first start by cleaning out the fridge and organizing the pantry. It’s a good time to check expiration dates too. I throw out anything that is holiday related and anything I know I don’t want around tempting me. It is hard to get things back on track sometimes. Cravings are REAL!

GRANOLA BAR ORGANIZER

This organizer seems so simple but it’s perfect for kids with different taste buds. We use it for snacks and granola bars but also would be perfect for spice packets, taco seasoning packets etc…

If I had to pick one thing to start with when organizing your pantry it would be this. I have had these containers for 2 years now and love them. They are great for younger kids because the can open and close them by themselves, so no more stale, opened bags in the pantry. We use them for opened cereal boxes and snacks. 10 PACK AIR TIGHT CONTAINERS

I ordered these about two years ago and they are holding up strong. I love how airtight they are and the perfect size for stacking in your fridge. These have replaced most of our Tupperware.

WATER BOTTLE ORGANIZER

I bought this last January and it has been so helpful keeping our water bottles from rolling over all the place. They boys know to stack them and pull from there. I am about to upgrade to a bigger one. Water bottles are taking over my cabinet. OR I need to clean out! 😉

CAN HOLDER

These can holders are perfect for keeping the big boxes out of your fridge. We have two sets and you can stack them on top of one another for space saving! And we all need space in our fridge, right?!

ONE EASY FAMILY DINNER FAVORITE

HEALTHY SLOPPY JOES

Ingredients

  • 1 red bell pepper, chopped

  • 1 green bell pepper, chopped

  • 1 onion, chopped

  • 2 lb. ground meat

  • 1 TBSP oil of choice

  • 2 tsp garlic

  • 2 small 8oz. tomato sauce

  • 2 tsp cumin

  • 1-2 TBSP chili powder (depending on spice you want)

Directions

  • Heat oil in your pan.
  • Add red and green bell peppers and onion
  • Saute for 5-7 minutes until tender
  • Add garlic and stir another minute
  • Add ground meat, brown meat completely
  • Add tomato sauce, cumin and chili powder
  • Stir to combine
  • Cover and turn heat off until ready to serve

Notes

  • Cut recipe in half to make a smaller portion. We make this amount for our family of 5 with leftovers.
  • Serve on bed of lettuce, sweet potato, bread or bun of choice
